6 Healthy Pumpkin Recipes You Have to Try This Fall

The leaves are falling. The weather is cooling off. Halloween is right around the corner! Yes, it’s officially "pumpkin spice" everything season! While we know there are very divided opinions on pumpkin spice, we are here for those of you who love it! If you're like us, then you probably want to eat your pumpkin spice and lose weight too! So, for your reading and tasting pleasure, we’re sharing these six must-try healthy pumpkin recipes with you!

Pumpkin Spice Pancakes

Ingredients: 

  • 1 Egg 
  • 2-3 oz. Plain Non-Fat Greek Yogurt
  • 1 pkg. Vanilla Creme Pudding protein powder
  • ½ tsp. Pumpkin Spice Extract or Pumpkin Pie Spice
  • 1 tsp. All Spice
  • 1 tsp. Cinnamon
  • 4-5 oz. Water
  • 1 pkg. Zero Calorie Sweetener (optional)

Instructions: 

Mix all ingredients together and slowly add water until the batter is a smooth, pourable consistency. Spray heated skillet with cooking spray and pour batter creating 4, 3-inch pancakes, browning on each side. Top with Walden Farms Syrup! 

Pumpkin Pie Shake 

Ingredients: 

Instructions: 

Blend in a smoothie machine or blender. 

Pumpkin Pie Spiced Ricotta 

Ingredients: 

  • 4 oz. Part-Skim Ricotta Cheese
  • 1 packet MRC Vanilla Creme Pudding protein powder
  • 1/3 cup Butternut Squash (cooked and mashed) 
  • 1/8 tsp. Vanilla Extract
  • 1 tsp. Pumpkin Pie Spice
  • 1/3 cup Unsweetened Almond Milk

Instructions: 

Place all ingredients in a blender, blend until cottage cheese is smooth, and enjoy. 

Crustless Pumpkin Cheesecake  

Ingredients: 

  • 16 oz. low-fat cottage cheese
  • 2 pkgs. MRC Vanilla Creme Pudding protein powder
  • 2-4 pkgs. zero-calorie sweetener
  • 1/4 tsp. Cinnamon
  • 1/2 tsp. Pumpkin Spice
  • 1/4 tsp. Allspice
  • 1/4 tsp. Nutmeg
  • 1 pkg. Knox Unflavored Gelatin
  • 1/4 cup Hot Water. 

Instructions: 

Mix Knox gelatin and hot water in the food processor or blender. Add all remaining ingredients and blend until smooth. Transfer to a bowl or container and chill in the refrigerator for at least 1 hour. Top with additional pumpkin pie spice or cinnamon and enjoy!

Homemade Pumpkin Pie Spice

Ingredients: 

  • 3 TBSP Ground Cinnamon
  • 2 tsp. Ground Ginger
  • 2 tsp. Ground Nutmeg
  • 1 tsp. Ground Allspice
  • ½ tsp. Ground Cloves 

Instructions:

Mix together and store in an airtight container.

Pumpkin Spiced Chocolate Covered Truffles 

Ingredients: 

Instructions: In a small bowl, combine Vanilla Crème Pudding and pumpkin pie spice. Add 1 ½ - 2 ounces water. Roll into balls (size according to your preference) and freeze on a cookie sheet for 20 minutes. In a small bowl, mix the Double Chocolate Pudding according to package instructions. Remove the frozen truffle balls from the freezer and roll them into the chocolate pudding mix. Note: you will still have about ¾ of your Double Chocolate Pudding mix left over so save it for later! Place rolled truffles on a cookie sheet covered in waxed paper or parchment paper, and freeze for one hour until hardened.
